At Le Salle Dining, wine is the foundation.
Our tasting menu is guided by structure — acidity, texture, minerality, and progression — rather than fixed ingredient matching. Each dish is created in conversation with wine, allowing the evening to unfold with intention and harmony.
Rather than pairing dishes after they are conceived, we build the experience from the glass outward.
This is refinement through restraint.

Instead of preset pairings, we follow a natural progression through wine — from brightness and tension to texture, lift and depth — creating a cohesive sensory journey that resonates from first course to last.
 
 

“Simplicity is not simple”

Instead of wine matching the food, we will select wines by the glasses. We will use the wine flavour profiles as guidelines to construct dishes with seasonal harvests. We use nonverbal communication to express our passion for food & wine and hospitality, just like in the movies of Charlie Chaplin without speaking a word.
